Fireside 5 on Friday

Happy Friday to you! Where did this week go?? We have a sick baby…which for us, means little sleep around our house (although it’s getting better!). Charlotte has a double ear infection and bronchialitis. Poor thing!! She’s on antibiotics and seems to feeling just fine now. Thank goodness! We’re so grateful for an overall healthy baby, and I know little ones (especially those who go to daycare) seem to pick up everything. But it’s always hard to see your little nugget not feeling well 🙁 Don’t you just want to wave a magic wand that makes it all better? If only.

Fireside 5 on Friday

ONE– Let the fun of baby food making begin! I’m all for saving money and giving my baby the best, so making her food is right up my alley. That’s not to say that I won’t be buying the store-bought food from time to time. It’s much easier to transport that than the food in our freezer. But it’s pretty nice to just pop one of these cubes out, nuke it for 15 seconds and feed it to the babe. Fireside 5 on Friday
TWO– Charlotte is doing big girl things these days. Part of me is overjoyed, and part of me says “STOP!! STAY LITTLE!!”. Is this a normal mama feeling?
She’s gnawing on an apple in her mesh feeder, AND we started solids a few weeks ago. She loves oatmeal, and isn’t quite sure about peas. We tried sweet potatoes today and she wasn’t exactly thrilled. I’m sure she’ll get used to the taste and come to love her veggies…..right? I’m so impressed with her chewing skills. It’s like she’s been eating solids her whole life! THREE– Can you say spoiled? This is how we roll when the whole family goes somewhere. Charley and I in the backseat and Dad and Barkley in the front. We get some interesting looks when people see a giant dog chillin’ in the front seat of the truck. Fireside 5 on Friday

FOUR– What other big girl things is Charlotte doing, you ask? Taking baths in the big girl tub!! She’s officially sitting up on her own without falling, so it was time for the transition. We put her in a laundry basket to contain her a big, and it’s worked out great. I’ll be honest, she only lasts about 5 minutes like this before she starts crying. I’m not sure what it is about the big tub that she doesn’t like. She used to LOVE bathtime in the baby bath, but she’s way too big for it now. She’s slowly getting to where she can stand it longer and longer each time. We’ll keep trying! For now, short baths it is. Fireside 5 on FridayFireside 5 on Friday
FIVE– I want a lot of things for Charlotte, but one of them is for her to constantly wonder and dream. I think with two parents like Eric and I, she’s bound to have a little dreamer in her. Fireside 5 on FridayHave a great weekend!

Easy Weeknight Meal: Mexican Lasagna

Easy Weeknight Meal: Mexican LasagnaThis Mexican Lasagna is to die for! I’ve been seeing the recipe float around Pinterest for some time now and thought I should go ahead and try it. I tweaked it to make it my own, so I’ve included the recipe below, but it derived from this great recipe.
Personally, I love anything that can be prepped beforehand and popped in the oven when we’re ready for it. I work late one or two nights a week, so Eric gets Charlotte from daycare on those evenings. I decided to make this meal ahead of time so all he had to do was put it in the oven before I got home. It worked wonderfully and tasted great. It’s now on my list of go-meals during the week.

First, I made the chicken in the crockpot and shredded it when it was done. You can add seasoning to the chicken while it’s cooking, but it’s not necessary.
Then, mix the chicken, corn, black beans, sour cream, salsa and spices together.

Spray a glass baking dish with non-stick spray, and line it with overlapping corn tortillas.

Then, spread on a layer of the chicken mixture over the tortillas.
On top of that, add a layer of shredded cheese.
Follow it up with a second layer of overlapping tortillas and repeat the above two steps (just like you would with regular lasagna). The top layer should be a nice helping of shredded cheese.

Easy Weeknight Meal: Mexican Lasagna
And this is the end product!

Easy Weeknight Meal: Mexican Lasagna
I put foil over the top, with instructions for Eric to bake it the next night. Easy peasy!

Easy Weeknight Meal: Mexican LasagnaRecipe: (derived from here)

1 lb boneless skinless chicken breast, cooked and shredded (I did this in the crockpot)
1 cup sour cream
1 1/2 cups salsa
1 (4 oz) can diced green chiles
1 1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp ground cumin
1/2 tsp onion powder
1/4 tsp cayenne pepper
Salt and pepper
12 (6-inch) corn tortillas
1 can corn
4 cups shredded cheese
Follow steps above. Cook in a 350 degree oven for 1 hour.

Fireside 5 on Friday! [Valentine’s Day edition]

Happy Valentine’s Day! Love is in the air around here. Not only is it the day of love, but it’s Barkley’s 4th birthday too! It’s hard to believe he’s been with us that long. Poor Barkley, his sweet face didn’t even make it on to this post. Maybe next time, buddy.
I didn’t have time to decorate for Valentine’s Day this year, but I’m still feeling in the spirit. Eric and I aren’t big on Valentine’s Day celebrations….every day is a day for love, right?! We’re going to order some steaks from the butcher, rent a movie and have a nice date night in. Sounds like a pretty solid evening.

I’m linking up on this fine Friday- click the logo below to check out all the other Friday bloggers!

Fireside 5 on Friday! [Valentines Day edition]

ONE– Of course I did a Valentine’s Day photo shoot! Duh
She is an active one these days, so all of the pictures are fuzzy…
My Mom got Charlotte the CUTEST outfit, stuffed animal and card 🙂 Thanks, Grandma Haug!

TWO– My fortune last week. It was precisely what I needed in that very moment. God is good!Fireside 5 on Friday! [Valentines Day edition]

THREE– I made this Mexican Lasagna Wednesday night. ACTUALLY, I prepared it Tuesday, put it in the fridge, and baked it last night for dinner. I had to work late, so Eric was on daddy duty. To make life a little easier on him, he just had to pop this in the oven and dinner was ready when I got home. I’ll have the recipe up soon. It was devine and the leftovers are equally as good.Fireside 5 on Friday! [Valentines Day edition]

FOUR– I mean, really. How did I get so lucky to have these two sweet faces in my life? Some of the best moments are spent right here on the living room floor, any night of the week. Eric makes Charlotte laugh and smile more than anyone on this planet. Their connection makes my heart so happy. Fireside 5 on Friday! [Valentines Day edition]

FIVE– I made this wooden sign for the basement the other day. It makes for a great edition to the giant, blank walls down there. Between this and the tree wall art, we’re making headway on basement decorations!Fireside 5 on Friday! [Valentines Day edition]I hope you all have a great weekend! I know we will be enjoying the warm(er) weather!
