Banana Bread Bake

Although I cook every day, it’s rare that a recipe actually makes it to the blog these days. I thought I’d share this banana bread bake, because it’s delicious!

My Mom brought us a loaf of banana bread she had made. We didn’t finish the whole loaf before it started getting stale. I couldn’t let it go to waste, so I put my trusty breakfast casserole recipe to use with banana bread instead of white/wheat bread. Banana Bread Bake Banana Bread Bake Banana Bread BakeRecipe:

1 loaf of banana bread, cubed
4 eggs
Splash of whole milk
1 tsp cinnamon

Spray a small glass baking dish. Cut up the loaf of banana bread into cubes. Line the bottom of the baking dish with bread cubes.

In a small bowl, whisk together eggs, splash of milk, and cinnamon.

Pour the egg mixture over the bread cubes.

Bake in a 350 degree oven for about 20 minutes or until eggs are set.

** This can also be made the night before. Cover with foil and refrigerate. Place in a 350 oven until warm (about 15 minutes)

Easy Weeknight Meal: Mexican LasagnaThis Mexican Lasagna is to die for! I’ve been seeing the recipe float around Pinterest for some time now and thought I should go ahead and try it. I tweaked it to make it my own, so I’ve included the recipe below, but it derived from this great recipe.
Personally, I love anything that can be prepped beforehand and popped in the oven when we’re ready for it. I work late one or two nights a week, so Eric gets Charlotte from daycare on those evenings. I decided to make this meal ahead of time so all he had to do was put it in the oven before I got home. It worked wonderfully and tasted great. It’s now on my list of go-meals during the week.


First, I made the chicken in the crockpot and shredded it when it was done. You can add seasoning to the chicken while it’s cooking, but it’s not necessary.
Then, mix the chicken, corn, black beans, sour cream, salsa and spices together.

Spray a glass baking dish with non-stick spray, and line it with overlapping corn tortillas.

Then, spread on a layer of the chicken mixture over the tortillas.
On top of that, add a layer of shredded cheese.
Follow it up with a second layer of overlapping tortillas and repeat the above two steps (just like you would with regular lasagna). The top layer should be a nice helping of shredded cheese.

I put foil over the top, with instructions for Eric to bake it the next night. Easy peasy!

1 lb boneless skinless chicken breast, cooked and shredded (I did this in the crockpot)
1 cup sour cream
1 1/2 cups salsa
1 (4 oz) can diced green chiles
1 1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp ground cumin
1/2 tsp onion powder
1/4 tsp cayenne pepper
Salt and pepper
12 (6-inch) corn tortillas
1 can corn
4 cups shredded cheese
Follow steps above. Cook in a 350 degree oven for 1 hour.

Fireside 5 on Friday! [Valentine’s Day edition]

Happy Valentine’s Day! Love is in the air around here. Not only is it the day of love, but it’s Barkley’s 4th birthday too! It’s hard to believe he’s been with us that long. Poor Barkley, his sweet face didn’t even make it on to this post. Maybe next time, buddy.
I didn’t have time to decorate for Valentine’s Day this year, but I’m still feeling in the spirit. Eric and I aren’t big on Valentine’s Day celebrations….every day is a day for love, right?! We’re going to order some steaks from the butcher, rent a movie and have a nice date night in. Sounds like a pretty solid evening.

THREE– I made this Mexican Lasagna Wednesday night. ACTUALLY, I prepared it Tuesday, put it in the fridge, and baked it last night for dinner. I had to work late, so Eric was on daddy duty. To make life a little easier on him, he just had to pop this in the oven and dinner was ready when I got home. I’ll have the recipe up soon. FOUR– I mean, really. How did I get so lucky to have these two sweet faces in my life? Some of the best moments are spent right here on the living room floor, any night of the week. FIVE– I made this wooden sign for the basement the other day. It makes for a great edition to the giant, blank walls down there. Fireside Five for Friday

Happy Friday all! Eric and I were talking the other night about how fast the weeks go and how every day (or really minute for that matter) holds more meaning than it ever has- every day is one day closer to meeting our daughter ๐Ÿ™‚ That is beyond exciting!! People look at me at this point in my pregnancy and say, “Any day now!”, and I nod and smile and think….holy canoly, our baby will be entering this world so so soon. Just thinking about this brings tears of joy. We’re so ready to hold her and introduce her to this beautiful life.

I feel like I should call this the “nesting edition”. That’s exactly what I’m doing these days- nesting! I spent last night making four freezer maternity meals/sides. Talk about a productive evening!

I’ve been neglecting decorating above the cabinets for some odd reason. The other day, it occurred to me that I’m not exactly going to have gobs of time to decorate once Ms.C gets here, so I better get on it. I asked Eric to cut me a piece of barnwood from the garage, got out of my stencils and paint, and made myself a sign! The whole process took 10 minutes- that’s my kind of project! I’m thinking the other side of the kitchen cabinets needs a sign too…I’m going to go with “Market”. Fireside Five for Friday TWO– 37 weeks!

This is what “full term” looks like people! I’m not a fan ofย selfies, but it’s better than nothin’. It’s still amazing to me the things strangers say to a pregnant woman when they look like this. It’s like people lose all sense of boundaries when they see the belly. Most people have been nice, thankfully ๐Ÿ™‚

These were the two main meals I made last night to freeze for maternity leave. I like to be prepared, people, so the idea of having a few meals all ready to go on an evening I don’t feel like cooking makes me quite happy.

There’s really nothing like it! My friend Angela gifted me with some delicious green peppers, which were the inspiration for the salsa. I don’t want to brag or anything, but this stuff is the bomb. I’ll share the recipe soon, don’t you worry.

Fireside Five for FridayFIVE– Zucchini Bread!

And last but not least, I whipped up some divine zucchini bread last night! I made two pans- one to freeze and one to gobble right now. Here’s the recipe: I’d highly recommend it! The zucchini was given to me by Michelle, who has a massive garden. Love me some garden veggies! I grated up the huge zucchini, used 2 cups of it for this recipe, and froze the rest of it in a cupcake pan for easy access.
