Comfort Food Like You’ve Never Tasted

This post is courtesy of my amazing friend, Angela Fernandez, a.k.a the best cook I know!

This is literally some of the best food I’ve ever eaten. Angela was kind enough to divulge her recipes to me, and allow me to share them with the world! I would take advantage if I were you.

Homemade Egg Noodles
We made a double batch…
4 cups flour
2 eggs
lukewarm water as needed

Incorporate, roll out on floured surface, cut into size you desire
Throw into pot of boiling chicken stock for about 45 minutes to an hour

Roasted Chicken
Roast chicken with desired spices
Peel off all of the meat to use in the soup

Chicken and Noodles
Make homemade mashed potatoes as you like
Please desired amount of chicken in pot and add noodles with some of the stock. Add more according to how much liquid you like
Serve over mashed potatoes

Chicken Noodle Soup
Add stock, noodles, desired amount of chicken.
Add 2 carrots, chopped
2 celery stalks (chopped) and
1 onion, chopped
Add desired spices.

If you like it creamy, don’t put as much stock in the pot, and put more in if you like it liquidy. Simmer for approximately 30 minutes, or until the carrots are cooked all the way through.

Homemade Chicken Stock
Roast one onion, 3 garlic cloves, and chicken bones at 425 degrees for an hour, flipping every 15 minutes. Cover in olive oil, salt and pepper
In pot, add all roasted vegetables and bones, fresh parsley, basil, salt and pepper, carrots and celery, and whole black peppercorns. Fill the pot with water (about 3 inches above where the ingredients stop).
Simmer for approximately 2 hours.
Pour everything into a cheese cloth to strain all ingredients out, reserving the liquid.
