Sunday Morning Grub

This is what a Sunday morning looks like for us….

Yummy breakfast, a cup of coffee and HGTV, to be exact.

This breakfast scramble is an original recipe. You should really try it. You’ll be happy you did.

Mushroom, Egg and Cheese Breakfast Scramble

Frozen diced potatoes
5 eggs
Dash of Milk
2 Tbs Butter
1 cup Mushrooms, sliced
Cheese, to your liking. We used Cheddar and Swiss
Seasoning salt and pepper to your liking

First, cook up the potatoes with the cover on (about 15 minutes). When they are done, place them on a plate lined with paper towels to drain the oil. With the remaining oil in the pan, cook up the sliced mushrooms. Add butter to the skillet with the mushrooms. Cook until soft, about 5 minutes. Add the eggs and start scrambling with a spatula. Add a dash of milk and continue scrambling until done. Add cheese (we used cheddar and swiss) until melted. Place in a bowl and add cooked potatoes on top. Enjoy!
