Maternity Photos

Well, we decided not to hire a maternity photographer this time around. We’ve just been taking random photos when we get the chance or having a friend snap some of us as a family. They’re not professional quality by any means, but they work for the few photos we’ll frame around the house. Luckily, we’ve had good luck with them and have a great way to remember this second pregnancy (which has absolutely flown by)! Here are some of our favorites…

A Look Back

After 5 months with our precious little gal, I am reminiscing on the weeks leading up to her arrival. I was lucky enough to love pregnancy. Even when I wasn’t feel well, I was still always so excited that I was cooking up a baby- I knew that there was a REALLY good reason for feeling yucky. I know that might sound obnoxious to those women who were sick for 9 straight months! I do consider myself lucky and I hope I continue to have easy pregnancies.

Eric and I made an effort to take a photo of me every week, wearing the same outfit. It’s so amazing to see the transformation! It’s also kind of embarrassing to see my face get more and more bloated…if only I took photos of my feet, ick. And I gotta love those fake smiles on the mornings where I was feeling less than my best.

I remember thinking at every stage that I was just “HUGE”, only to find myself getting bigger and bigger in the weeks ahead. I know this sounds ridiculous, but I loved watching the numbers on the scale increasing because it meant that our daughter was growing like she should. I have heard women say that they never truly knew themselves until they became a mother. I agree with that wholeheartedly. I’ve learned more about myself in the last year that I could’ve ever imagined. These photos are such a representation of that journey.A Look BackThe 38 week picture was taken a day and a half before Charlotte was born! It was our third wedding anniversary ๐Ÿ™‚A Look BackWe’re getting ANOTHER round of snow here this morning. Looks like it’s a baby snuggles, Olympics and DIY project kinda day. Fireside Five for Friday

Happy Friday all! Eric and I were talking the other night about how fast the weeks go and how every day (or really minute for that matter) holds more meaning than it ever has- every day is one day closer to meeting our daughter ๐Ÿ™‚ That is beyond exciting!! People look at me at this point in my pregnancy and say, “Any day now!”, and I nod and smile and think….holy canoly, our baby will be entering this world so so soon. Just thinking about this brings tears of joy. We’re so ready to hold her and introduce her to this beautiful life.

I feel like I should call this the “nesting edition”. That’s exactly what I’m doing these days- nesting! I spent last night making four freezer maternity meals/sides. Talk about a productive evening!

I’ve been neglecting decorating above the cabinets for some odd reason. The other day, it occurred to me that I’m not exactly going to have gobs of time to decorate once Ms.C gets here, so I better get on it. I asked Eric to cut me a piece of barnwood from the garage, got out of my stencils and paint, and made myself a sign! The whole process took 10 minutes- that’s my kind of project! I’m thinking the other side of the kitchen cabinets needs a sign too…I’m going to go with “Market”. Fireside Five for Friday TWO– 37 weeks!

This is what “full term” looks like people! I’m not a fan ofย selfies, but it’s better than nothin’. It’s still amazing to me the things strangers say to a pregnant woman when they look like this. It’s like people lose all sense of boundaries when they see the belly. Most people have been nice, thankfully ๐Ÿ™‚

Fireside Five for Friday THREE– Maternity Meals: Chili and Enchiladas

These were the two main meals I made last night to freeze for maternity leave. I like to be prepared, people, so the idea of having a few meals all ready to go on an evening I don’t feel like cooking makes me quite happy.

There’s really nothing like it! My friend Angela gifted me with some delicious green peppers, which were the inspiration for the salsa. I don’t want to brag or anything, but this stuff is the bomb. I’ll share the recipe soon, don’t you worry.

And last but not least, I whipped up some divine zucchini bread last night! I made two pans- one to freeze and one to gobble right now. Here’s the recipe: http://allrecipes.com/recipe/moms-zucchini-bread/. I’d highly recommend it! The zucchini was given to me by Michelle, who has a massive garden. Love me some garden veggies! I grated up the huge zucchini, used 2 cups of it for this recipe, and froze the rest of it in a cupcake pan for easy access.

Make Ahead Frozen Breakfast Burritos

Lately, I’ve been really into make-ahead meals that I can freeze. I’m trying to get prepared for maternity leave! I think it’d be really nice to have some meals all ready to go in the freezer rather than making something or spending money on going out. With that said, I made some delicious breakfast burritos the other day that I thought I would share!

I’ve realized that everyone likes different ingredients in their breakfast burritos. That’s what I like about these guys- you really can throw in whatever your heart (and stomach) desires. I made a mixture of sausage, breakfast potatoes, egg and cheese for ours. Next time, I plan to make bacon, potato, egg and cheese. Veggies would be great in there too, like onions and peppers. Yum!

Make-Ahead Frozen Breakfast Burrito Recipe:

1 lb Spicy Jimmy Dean Sausage, browned
8 Eggs, Scrambled
2 Cups Shredded Cheese
Shredded Breakfast Potatoes, browned in the skillet
A couple dashes of Hot Sauce of your choice

Prepare each ingredient above separately and then combine in a large bowl. Heat up 4 tortillas in the microwave for 10-20 seconds to soften. Butter one side of the tortilla. Add your desired amount of the burrito mixture. Roll up the tortilla and wrap tightly in foil. Place in the refrigerator or freezer.
As for reheating the burritos: I found that if the burrito is refrigerated, it takes about 1 1/2-2 minutes in the microwave. If frozen, it takes closer to 3 1/2 minutes. This all depends on your microwave settings and how hot you want the burrito.
